Vegan Cold Overnight Oats

This vegan, heart-healthy option is just what you need for a healthy snack or a nutritious breakfast. 

Our recipe is dairy-free and contains the super food, chia seeds. Chia seeds are an excellent source of fiber and omega-3 fatty acids. Emerging research suggests that incorporating chia seeds into a healthy diet may help improve cardiovascular risk factors such as lowering cholesterol, triglycerides and blood pressure.

Ingredients

  • 2/3 cup rolled oats
  • 1 tbs. chia seeds
  • 1 cup unsweetened non-dairy milk (we recommend 1/2 coconut milk, 1/2 oatmilk)
  • 1-2 tbs. brown sugar
  • 1/4 cup blueberries

Level of Difficulty: Easy 
Yields: 1 Serving (about 12 oz.) 
Total Time: 2+ hours 
Prep Time: 5 mins 
Cook Time: 2 hours (best left overnight) 

Preparation

  1. Mix together ingredients in a container or jar until well combined.
  2. Cover and place in the refrigerator for at least 2 hours or overnight.
  3. Top with blueberries or the fruit of your choice.
