Recipe: Apple Honey Cake

Looking for a sweet and simple cake to warm up cold days or impress your guests? Enjoy this traditional Jewish New Year pastry any time of year. As a bonus, it’s gluten-free!

Serves 8

Ingredients: 

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup grated apple (roughly 1 medium apple)
  • 1/2 cup honey
  • 1/4 cup coconut or vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 Tbsp sliced almonds


Instructions:

  1. Preheat the oven to 350 F.
  2. Grate the apple and squeeze the liquid out. Add it to a large bowl with the eggs, applesauce, oil, honey, vanilla and cinnamon.
  3. Add the oat flour, almond flour and baking powder to the mixture. Whisk until smooth. 
  4. Grease an 8-inch, round cake pan or a 5-by-9-inch loaf pan, and pour the batter in. Top with sliced almonds.
  5. Bake for 30 minutes or until a toothpick comes out clean and the top of the cake is firm to the touch.
  6. Serve warm or at room temperature.
