Recipe: Herb Marinated Beans

This recipe for herb marinated beans is easy to prepare and versatile: try a spoonful on a salad, add them to a grain bowl, or enjoy them as a side dish.
They are a great source of plant-based protein and fiber as well.
Ingredients
1 medium shallot, thinly sliced
2 cloves garlic, thinly sliced
2 tablespoons lemon juice
½ cup extra-virgin olive oil
½ cup chopped celery
¼ chopped parsley
2 tablespoons fresh dill
2 tablespoons finely chopped fresh oregano
½ teaspoon salt
1 15 oz can no-salt-added white beans, such as great northern or butter beans, rinsed
1 15 oz can red kidney beans, rinsed
Preparation
- Combine shallot, garlic and lemon juice in a large bowl and set aside for 10 minutes. Whisk in oil.
- Add celery, parsley, dill, oregano and salt and stir to combine. Add beans, chiles and lemon zest and toss to coat.
- It’s worth letting the beans marinate for at least 24 hours to infuse them with deeper flavor.
** To make ahead: Refrigerate for up to three days
