Recipe: Apple Honey Cake

Looking for a sweet and simple cake to warm up cold days or impress your guests? Enjoy this traditional Jewish New Year pastry any time of year. As a bonus, it’s gluten-free!
Serves 8
Ingredients:
- 1 cup oat flour
- 1/2 cup almond flour
- 2 eggs
- 1/2 cup applesauce
- 1/2 cup grated apple (roughly 1 medium apple)
- 1/2 cup honey
- 1/4 cup coconut or vegetable oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 Tbsp sliced almonds
Instructions:
- Preheat the oven to 350 F.
- Grate the apple and squeeze the liquid out. Add it to a large bowl with the eggs, applesauce, oil, honey, vanilla and cinnamon.
- Add the oat flour, almond flour and baking powder to the mixture. Whisk until smooth.
- Grease an 8-inch, round cake pan or a 5-by-9-inch loaf pan, and pour the batter in. Top with sliced almonds.
- Bake for 30 minutes or until a toothpick comes out clean and the top of the cake is firm to the touch.
- Serve warm or at room temperature.
