Recipe: Sheet Pan Smoky Roasted Chicken Thighs with Cauliflower

This flavorful and easy-to-make Chicken and Cauliflower dish is packed with nutrients and designed to help maintain healthy blood glucose levels. This recipe is perfect for anyone undergoing cancer treatment or simply looking to improve their health.

This lower-carbohydrate meal is packed with protein, including the low-carbohydrate vegetable cauliflower, as well as protein, complex carbohydrates, potassium and fiber in the chickpeas.

Ingredients:

Chicken & Cauliflower 

  • 1 teaspoon of coriander
  • 1 tablespoon of cumin 
  • 2 tablespoons of smoked paprika
  • 3 tablespoons of olive oil
  • 5 tablespoons of tomato paste
  • 2 large lemons, juiced 
  • 5 garlic cloves, minced 
  • 1 ounce of chickpeas, drained and rinsed
  • 1 package of boneless, skinless chicken thighs 
  • 1 large head of cauliflower, cut into florets 
  • 1 large onion, sliced 
  • Salt and pepper to taste 

Yogurt Sauce 

  • 2 cups of plain, nonfat Greek yogurt 
  • 3 teaspoons of garlic powder
  • 1 tablespoon of olive oil
  • Salt +pepper pepper to taste 

Preparation: 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, combine the chicken thighs, onions, cauliflower and chickpeas.
  3. Salt and pepper the chicken, beans and vegetables to taste.
  4. In a small bowl, mix the tomato paste, olive oil, lemon juice and seasonings. Whisk well until smooth.
  5. Drizzle the tomato paste mixture over the veggies, chicken and chickpeas.
  6. Using your hand, mix it all together.
  7. On a lined baking sheet, spread out the ingredients evenly.
  8. Bake for 35-40 minutes or until golden brown and crispy.
  9. To make the yogurt dressing, add listed ingredients into a bowl. Whisk until combined.
  10. Add the yogurt dressing and baked ingredients to a plate, garnish with your favorite toppings, such as lemon or cilantro and enjoy!
