Recipe: Watermelon Granita with Blueberries

A white bowl is filled with fresh watermelon chunks and blueberries that are sprinkled with mint leaves.

Cool down this summer with a healthy and delicious blended treat packed with watermelon and berries.

Serves 4

Ingredients

4 cups watermelon

fresh berries of your choice

fresh mint

Preparation

  1. In a food processor or blender, purée 4 cups of watermelon. Fill two ice cube trays and freeze for about 3 hours.
  2. Once frozen, place in a food processor with an S blade. Gently process.
  3. Fill glasses as follows: 1/3 frozen watermelon, 1/3 fresh berries, 1/3 watermelon.
  4. Top with blueberries and a sprig of mint.

Seasoned Cook

Make extra ice cubes to use in lemonade.
