Recipe: Pumpkin Deviled Eggs

The JTCC dietitians served up fun healthy treats in the Culinary Medicine Studio with lots of protein to keep up your energy for trick or treating ! Happy Halloween! 

Pumpkin Deviled Eggs

Ingredients:

  • 6 eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • ¼ teaspoons dijon mustard
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 green onions thinly sliced


Instructions: 

  1. Bring eggs to a boil over medium heat. Once the water reaches boiling, reduce heat and cover eggs. Let cook for 9-12 minutes.
  2. Once the eggs are cooked, place in a large ice bath. Gently peel off the shells once cooled.
  3. Cut eggs lengthwise in half and separate yolks and whites. 
  4. Mash egg yolks with a fork and add mayonnaise, greek yogurt, dijon mustard, onion powder, salt and pepper. Mix until smooth and creamy.
  5. Spoon or pipe egg yolk mixture into egg white halves. Create a rounded shape resembling a pumpkin. 
  6. Place sliced green onion on each egg to create a pumpkin stem
  7. Add to a cheese board with veggies and whole wheat crackers and enjoy a healthy halloween treat!
